Tips for Cooking Buffalo Meat

*Thaw buffalo meat naturally.  Microwaves tend to toughen meat.

*Remember to cook buffalo meat "Low and Slow."  Buffalo meat will cook quickly because there is so little fat.  Compared to beef, buffalo cooks at a lower temperature but will get done in about the same amount of time.

*When grilling buffalo steaks or buffalo burgers, lay a sheet of foil down on the grill to prevent sticking.  This will allow the juices to remain near the meat.  Remember to grill at a lower heat.

Cooking with Buffalo Meat


Saucy Buffalo Round Steak
(or Buffalo Minute Steak)

2 lbs. Buffalo Tenderized Round or Minute Steak
1 Small Onion Sliced (if desired)
1 pkg. Dry Ranch Dressing
1 bottle Bacon French Salad Dressing
2 T Worchestershire Sauce

Brown Buffalo Tenderized Round Steak or Buffalo Minute Steak on medium heat in a skillet, no oil necessary.  Place Buffalo Tenderized Round Steak or Buffalo Minute Steak in crock pot along with onion, if desired.  Mix remaining ingredients together and pour over Buffalo Steaks.  Cook in crock pot on low for 6 hours or high for 3-4 hours until done.
Amazing Buffalo Brisket

This family recipe has been handed down for three generations.  It is a holiday favorite!-- Heather Oden

Marinade:
1 T Liquid Smoke
1 tsp. Garlic Salt
1 tsp. Onion Salt
2 tsp. Celery Seed or Celery Salt
2 T Worchestershire Sauce
2 T Soy Sauce

Place 3-4 pound, naturally thawed, buffalo brisket in a foil-lined casserole dish.  Make sure that there is enough foil to seal over the top when finished.  Mix marinade and pour over buffalo brisket.  Seal the foil over the top so that the buffalo brisket is completely encased in the foil and able to marinade.  Place the casserole dish in the refridgerator over night.  Bake the buffalo brisket at 275 degrees for approximately 4-5 hours or until inserted meat thermometer reaches desired doneness.
Thunderhoof's Buffalo Chili

2 lbs. Ground Buffalo Burger
2 Large Cans Stewed Tomatoes
1 Medium Onion, Chopped
1 4oz Can Chopped Green Chilies
1 Can Chili Beans
1 8 oz Can Tomato Juice
1 T Garlic Salt
1 tsp Ground Black Pepper
2 tsp Hot Sauce
Shredded Cheddar Cheese

Brown ground buffalo burger and onion in skillet.  Combine other ingredients and simmer over stove top or in crock pot for four to six hours.  Top with shredded cheddar and onions.
